  • 1 tablespoon kosher salt for cooking water
  • 6 tablespoons unsalted butter
  • 5 garlic cloves minced
  • 3/4 cup heavy cream warmed
  • 4 ounces cream cheese softened

  • Potato masher or ricer
  • Small saucepan

Method

  1. Boil the potatoes in salted water for 15 to 20 minutes until tender.
  2. Cook the garlic in 2 tablespoons butter for 1 minute and add the cream to warm.
  3. Tip: Warm cream keeps the mash fluffy.
  4. Drain the potatoes and let them steam dry for 1 minute.
  5. Mash with the remaining butter and cream cheese.
  6. Stir in the garlic cream, season, and top with chives.

Notes

Don't use a blender or food processor or the potatoes will turn gluey.
