Ingredients

  • 2 large sweet onions
  • 1 cup all-purpose flour
  • 1 cup cold sparkling water
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • Vegetable oil for frying
  • Ketchup or ranch for dipping

Equipment

  • Heavy pot or Dutch oven (for frying)
  • Candy or deep-fry thermometer
  • Wire cooling rack

Method

  1. Slice the onions into 1/2-inch rings and separate them.
  2. Whisk the flour, garlic powder, paprika, and salt together.
  3. Whisk in the cold sparkling water until smooth.
  4. Tip: Ice-cold sparkling water makes the batter extra light and crisp.
  5. Place the panko in a shallow dish.
  6. Heat 2 inches of oil to 375°F.
  7. Dip each ring in the batter and press firmly into the panko.
  8. Fry in batches 2-3 minutes per side until deep golden.
  9. Drain on a wire rack, salt immediately, and serve hot.

Notes

Keep the oil at 375°F and avoid crowding the pot.
Re-crisp leftovers in a hot oven or air fryer, not the microwave.
