Ingredients

  • 4 hoagie rolls split
  • 2 cups finely shredded lettuce
  • 1/2 cup finely diced tomato drained
  • 1/4 cup finely diced red onion
  • 1/3 cup chopped pepperoncini
  • 4 oz sliced salami
  • 4 oz sliced deli ham
  • 8 slices provolone cheese
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon mayonnaise
  • 1 teaspoon dried oregano
  • 1 clove garlic minced
  • Salt and black pepper to taste

Equipment

  • Baking sheet (for toasting the rolls)
  • Large mixing bowl
  • Sharp serrated knife

Method

  1. Preheat oven to 400°F and place split rolls cut-side up on a baking sheet.
  2. Top the bottom halves with provolone and toast 3-5 minutes until melted.
  3. Tip: The melted cheese protects the bread from the dressing.
  4. Whisk the olive oil, vinegar, mayonnaise, oregano, garlic, salt, and pepper.
  5. Toss the lettuce, tomato, onion, and pepperoncini with the dressing.
  6. Layer the salami and ham over the cheese.
  7. Pile the chopped salad on top, close the sandwiches, and slice in half.

Notes

Chop the lettuce very finely so the filling stays together.
Best eaten the same day; assembled sandwiches hold about 4 hours wrapped.
