Ingredients

  • 1 1/2 pounds Brussels sprouts halved
  • 6 slices thick-cut bacon chopped
  • 2 tablespoons olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons pure maple syrup
  • 1 tablespoon balsamic vinegar
  • 1/4 teaspoon red pepper flakes optional
  • 1/4 cup toasted pecans optional

Equipment

  • Large rimmed baking sheet
  • Large mixing bowl

Method

  1. Preheat the oven to 425°F with a baking sheet inside.
  2. Toss the sprouts with the oil, salt, and pepper and spread cut side down on the hot pan.
  3. Tip: Cut side down gives the best caramelization.
  4. Add the bacon and roast 15 minutes, then stir and roast 8 to 10 minutes more.
  5. Drizzle with the maple and balsamic mixture and roast 2 minutes more.
  6. Top with pecans and serve.

Notes

Dry the sprouts well so they roast instead of steam.
Reheat in a hot oven or air fryer to re-crisp.
