  • 3 cups old-fashioned rolled oats
  • 1 cup raw pecans roughly chopped
  • 1/2 cup raw pepitas
  • 1/3 cup pure maple syrup
  • 1/4 cup pumpkin puree
  • 1/4 cup coconut oil melted

  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup dried cranberries

Equipment

  • Large baking sheet
  • Parchment paper
  • Large mixing bowl
  • Spatula

Method

  1. Preheat oven to 325°F and line a baking sheet with parchment.
  2. Stir together the oats, pecans, pepitas, spice, and salt.
  3. Whisk the maple syrup, pumpkin, coconut oil, and vanilla and stir into the dry mixture.
  4. Press the granola into an even layer on the pan.
  5. Tip: Pressing firmly creates big clusters.
  6. Bake 30 to 35 minutes, rotating halfway.
  7. Cool completely without stirring, then break into chunks and add the cranberries.

Notes

Don't stir while the granola cools so it forms clusters.
Store airtight for up to 2 weeks.
