Ingredients

  • 1 cup warm whole milk
  • 2 1/4 teaspoons instant yeast
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/3 cup unsalted butter melted
  • 3 1/4 to 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons melted butter for brushing
  • Flaky sea salt optional

Equipment

  • Stand mixer with dough hook
  • 9x13-inch baking pan
  • Pastry brush

Method

  1. Combine the warm milk, yeast, and a pinch of sugar and let foam for 5 minutes.
  2. Add the sugar, egg, butter, flour, and salt and knead 6 to 8 minutes until smooth.
  3. Tip: The dough should be slightly tacky.
  4. Let the dough rise in a covered bowl for 1 hour until doubled.
  5. Divide into 12 pieces, shape into balls, and arrange in a greased 9x13-inch pan.
  6. Let rise 30 minutes, then bake at 350°F for 18 to 20 minutes.
  7. Brush with melted butter while hot.

Notes

Rolls can be shaped, covered, and refrigerated overnight, then baked the next day.
Use a thermometer to check the milk is about 110°F so the yeast activates properly.
