Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion diced
  • 1 bell pepper diced
  • 4 cloves garlic minced
  • 1 can 15 oz pumpkin puree
  • 1 can 28 oz crushed tomatoes
  • 1 can 15 oz kidney beans, drained
  • 1 can 15 oz black beans, drained
  • 1 cup chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Sour cream shredded cheddar, and green onions, for serving

Equipment

  • Large Dutch oven or pot
  • Wooden spoon

Method

  1. Brown the turkey in olive oil in a large pot.
  2. Add the onion and pepper and cook 5 minutes, then the garlic and spices.
  3. Tip: Cooking the spices briefly deepens their flavor.
  4. Stir in the pumpkin, tomatoes, beans, and broth.
  5. Simmer 25 minutes, stirring occasionally.
  6. Season to taste and serve with sour cream, cheddar, and green onions.

Notes

Use plain pumpkin puree, not pie filling.
Chili tastes even better the next day.
